This week, my roommates and I decided to make a lasagna that was okay to eat on Passover, because there are still a few days of the holiday. We found a recipe that replaces the noodles with pieces of matzah and made it. We layered pieces of matzah that had been softened by being soaked in water for a short amount of time, with tomato sauce that was mixed with some onions, and three different types of cheese. We decided not to use many vegetables because my roommates know that I am do not like many veggies. It was in the oven for a total of about 40 minutes, and then we let it sit and cool for about 10 minutes. It was really good, and it was hard to tell that it was matzah instead of noodles, which I really liked. As well as all the cheese on top! This is something that I would definitely make again during future Passovers.
