This past weekend was the beginning of a Jewish holiday, Passover. Since I do not live at home and was not with my family for the holiday, my roommate and I decided to make dinner and do a smaller version of what normally happens during Passover. The first two nights of the holiday have big dinner services, so we had a couple of people over for dinner both nights. It was fun but a lot of work. Both nights we made matzah ball soup for the appetizer. We tried to make it vegan for the first night, but it did not work well because the eggs are needed to make the matzah balls properly, and we tried to use flax as a substitute. When this batch did not work, I quickly made another, regular batch for the non-vegan guests. Since the first night was a vegan dinner, we made vegetable stir fry with broccoli, cauliflower, peppers, carrots, teriyaki sauce and some soy sauce for the main. We then had it with rice. I do not like veggies very much, so I made myself chicken instead and tried a small amount of the vegetables, which were not too bad. The second night, we made a very simple and tasty salmon that had salt, oil, and lemon on it, and we made potatoes as the side. Both nights, for dessert we had what we call “chocolate matzah”, which is matzah with caramel and chocolate on top. It is very good and very addicting! Although this weekend was very busy and lots of work, I had a great time and would love to do this again next year.
